We’re focused on investing our time in future talent and run an apprentice programme in partnership with Westminster Kingsway College. John Lawson himself study there along with some of the most highly regarded chefs in the industry, the college is one of the best catering colleges in the country.

Meet Josh, Apprentice Chef
Josh left university in 2019 and begun in an assortment of Essex restaurants. Working in large catering venues and vegan restaurants, his repertoire of food has only grown since he joined us in September last year.
Foraging and wild foods are his main interest. Using these foods from a nutritional standpoint to contribute toward the “real food” aspect; as well environmental concerns with the mass farming industries.
As an apprentice of Westminster, he is training to reinforce his skills and fortify his knowledge of the craft.
